Due to a glut in the garden, we've been eating courgettes every day for a couple of weeks - grilled, omlette, in chocolate cake etc. Got a fridge tray full, plus more in a cool cupboard, plus they're continuing to ripen in the veg patch, so we'll be eating them for another couple of weeks. Any other ideas? Not keen on boiled / stewed dishes eg mousaka, as we don't like soggy courgettes.
 
I once made some courgette muffins! It's a bit like using carrots in carrot cake - it gives the muffins texture and moisture. I also made some beetroot chocolate cake - and I hate beetroot! Tasted really nice though!:D
 
Slice lengthways very thinly, put in colander, cover with tea towel and heavy weight and leave overnight so dry out a bit. Then spread out on baking tray, sprinkle with paprika and slow cook in oven until crisp and use with a dip for healthy alternative to crisps

I have them sliced in half, hollowed out and then fill them with other sliced vegetables like sweetcorn and tomato etc including the courgette that was hollowed out and then baked in the oven with cheese on top - it's one of my favourite meals mm!

I roasted some the other week, too have with roast dinner.
I also cooked some in pan with peppers ,onions, and a tin of chopped toms.
 
My brother came home at the weekend and brought us some courgettes. He tols me about this recipe for courgette and feta cheese soup. Ive literally just made it and eaten it, it's sooo tasty!!

The recipe is:

Fry one large onion & two garlic gloves. Add 450g of diced courgette and 225g of diced potato, cook for 10 minutes.

Add a pint and a quarter of stock + some parsley (I used mixed herbs and added pepper too). Simmer for 20mins. Blitz and then add 80g of feta cheese and reheat if nessasary.

I'm off to get seconds...

I've been living on courgettes recently, someone I work with grows them and regularly brings them in for me. Yesterday I made courgette fritters, grated the courgette and added chopped onion and peppers plus a little egg and flour to bind the mixture and fried them for a few minutes on each side, very tasty!
 
courgettes & compost

My recent attempt at courgette fritters wasn't very success, as it coincided with our ducks not laying, so I didn't use any egg, so the grated pieces or courgette & potato didn't stick together. Tasted nice, but bore no relation to fritter shapes! Will try again with egg, onion etc. Actually, having a courgette free day, as partner is on Ridgeway Challenge 60 mile through night run - I tend to eat things he's not so keen on when he's away on races (summer) or working in Antarctica (northern winter). Doubt he'll be walking well enough to pick blackberries on Monday, although he can usually cycle OK.

By the way, courgettes are very easy to grow, particularly on compost heaps, where they often self-seed (start growing from compost contents without being planted). And, if you have a garden with soil (ie not a concrete yard) haven't got a compost heap, why ever not?!? We only let our council take away cardboard, some hedge trimmings & sunflower stalks in our green wheelly bin. All food waste, including fruit remnants collected from work colleagues by partner & me, goes into our compost heap, which helps us grow veg and fruit. So, no damage caused by methane producing waste going to landfill, and a valuable resource for us.
