Lovely. You can make the cheese topping by taking a tub of ricotta and mixing in an egg and loads of parmesan or cheddar or whatever cheese you fancy.

I do mine with mashed carrot and swede. Lovely. 🙂
 
Have used a mix of Swede and celariac to top mine. Did use a very small amount of carrot, roughly mashed, then mixed in, to add some colour. My grandaughters ate it.:D

I have used mashed swede but the cauliflower is lower in carbs
 
agreed Cathy, however for grandchildren the multi coloured effect of roughly mashed different vegetables together is visually appealing. It is still much lower in carbs than potato, esp if only a thin layer of topping.

I completely agree, I used mashed swede often with a roast dinner 😛
