Thank you so much Alison. I will give it a try tomorrow. I've looked up the best vegetables to use for diabetics and can't wait. I might even try it in the slow cooker at some stage. Thanks again.

It's easy, all you need is:

1/2 litre stock
1/2 kilo assorted veg
and 250/500 gms your choice of meat/fish/poultry
herbs/spices/S&P to taste

Chop the meat, if any, into chunks and brown it in a little oil (if it's not left overs that is), put the stock in a pan and bring to the boil then throw everything in and cook at a simmer till the veggies are soft. Liquidise the results and serve you'll never know there's veg in there. It's enough for two and freezes well. I use whatever leftovers are handy, it saves waste.

Using fish but can't find fish stock in Sainsbury's. Can I use vegetable?

Yes, of course. You can use plain water if you want to. That's the good thing about mystery soup, you can throw in anything you like.
 
You can put curry powder, chilli powder, anything that floats your boat 🙂
 
Well I made my first ever batch(?) of home made fish and vegetable (mystery) soup and it was delicious if a tad thick and I made too much. I say 'mystery' because if Heinz offered me a fortune for the recipe I wouldn't have a clue. Anyway used the slow cooker, put the rest in the fridge for tomorrow and my blood sugar is 5.5. Result. Thanks to all for your help, might try beef and veg next time.
On a separate note, I was telling my grown up nephew and he suggested using protein powder (not in the soup) that he uses to keep in shape. Anyone's thoughts? Thanks
