Cod with herby cheese topping


A simple way to make cod even more delicious.


Serves 2

Ingredients15g (1/2 oz) polyunsaturated margarine
15g (1/2 oz) plain flour
100ml (31/2 fl oz) milk
25g (1oz) strong cheddar or other hard cheese such as wensleydale, grated
1 teaspoon English mustard
2 tablespoons chopped mixed herbs
freshly ground black pepper
2 thick chunks of cod fillet or any other chunky white fish each weighing about 150g (5oz)
InstructionsPreheat the oven to 200C/400F/gas mark 6. Melt the margarine in a small pan, whisk in the flour and cook for 1 minute.
Gradually add the milk, whisking continuously, and simmer for a minute until you have a thick sauce.
Stir through the cheese, mustard and herbs, and season with the black pepper.
Place the cod pieces onto a baking sheet and spoon over the sauce.
Place in the oven and cook for about 15 minutes until the fish is cooked.
Serve with rice and your choice of vegetables.

That sounds very nice, I will give that a go next week, I am not a fish lover, but I do enjoy a piece of fresh cod, it is about the only fish I like. 😱

Hi Dave i have just printed that same receipe out sounds lovely.I have loads of cod in the freezer after getting it on special offer in tesco a couple of weeks ago i was wondering what to do with it lynne
 
sounds nice. My personal choice would be to serve with mashed potatoes and peas. I like instant mash!
 
Sounds Delicious :DI love seafood and practically live on Cod so i may try this recipe , thanks for posting it Dave 🙂
