I was diagnosed end of September. It's been a roller coaster but levels (type 2) going down.
I want to get more experimental with my food. Are coconut products:
* oil
*sugar
*flour
Better than wholemeal flour etc.
Any advice much appreciated.
I bought a tin of light coconut milk (No idea why!!!) What can I use it for Mark?I use coconut flour in baking all the time. Much better than any wheat flour .with our BG levels though it is very absorbent so more eggs and water needed than regular flour. Use coconut oil in cooking, but also use butter or olive oil. I have no experience of coconut sugar.
Chia pudding. Don't know the quantities off hand, but cocoa powder, vanilla essence, chia seeds & coconut milk. Mix together & leave in fridge overnight to set. Or make a Thai curry.🙂I bought a tin of light coconut milk (No idea why!!!) What can I use it for Mark?
In the case of diabetes, yes.so is it classed as better than wholewheat
I made nice pancakes with them.
