In my heart I know the answer but is there any such thing as a diabetic friendly mince pie? Just one without all the sugar even?
 
We buy mini ones, and/or ones with a lattice or no pastry top, rather than a full size mince pie with a lid!
 
You could try using 'fat head' pizza dough for the pastry - cook them completely whilst separate, so do the cup part in the tin, with the tops (perhaps just star shapes would be best) on separate trays, then gently warm the mincemeat in a thick bottomed pan to get it molten - stir or it will burn - then assemble the pies and allow to cool slowly in the oven so they look as 'real' as possible.
