Chicken & Tomato Casserole

Hi, does anyone have a cheap & easy recipe for a chicken & tomato casserole which could be cooked in an oven or a slow cooker?
 
Hmm.

8 thighs or four large breasts cut into pieces serves 4/6
A large onion roughly chopped
6 beef tomatoes roughly chopped
1 crushed clove of garlic (optional)
a few leaves of basil also chopped, or herbs of your choice
Add other veg such as carrots, courgette, cauli, broccoli, whatever you fancy or have handy
1/2 pint chicken stock
S&P to taste
A little oil for browning

Brown the chicken pieces in a frying pan and set aside, soften the onion and garlic in the chicken juices. Add a little of the chicken stock and give it a good scrub round with a wooden spoon to get the good stuff off the bottom add the rest of the stock and heat through. Layer all the ingredients in a casserole, pour the stock over the lot and place in a medium oven for up to two hours. Do the same with the slow cooker if that's what you're using. Serve with sweet potato mash.

Thank you for your replies and they sound delicious 🙂. I had searched Google myself but obviously couldn't find anything appealing so again thank you for coming to my rescue 🙂
 
LOL. Let me know, I just invented it on the spot and haven't actually tried it myself yet.
