When weighing this out would you weigh the chicken & rice or just the rice?
 
It depends what carb guide you’re using. If your guide says “Chicken Fried Rice” then the carb value given will be for the whole thing. Anyway, if the chicken is in small pieces it would be a pain to pick it all out!
 
I agree with @Inka that you would struggle to take the chicken out.
Furthermore, fried rice is more than just chicken and rice so there may also be sauces and vegetables which can affect the carb value.
Remember carb counting is not an accurate science so you may need a bit of guesswork and maybe correction later.

Personally, if this was from a takeaway, I wouldn't weigh any of it and go with a rough guess.

I like to have a whole chicken curry to myself and I usually take about 5 or 6 units of bolus with that depending on what my level was prior to eating.
Then I keep an eye on what happens over the next 4 hours.
I found that my Libre shows that whilst most foods have a quick peak starting about half an hour after eating, my chicken curry doesn't start kicking in for about 3 hours after I start eating, by which time much of my bolus has gone. So next time I'll be taking a split bolus of 1 unit to kick me off once I've finished eating and then the rest after 2 hours. Hopefully that will sort it out. I have a tendency to pile some chocolate in after the curry as part of "treat night" so that muddies the waters a bit. Oh and yes, I do need to unbutton my trousers after eating all of that food !!!

You will need to go through your own experimentation to see what works for you.
 
For takeaways I don’t weigh it either, I just bolus for a standard high carb meal and correct later. It’s not good to take too much insulin in one go anyway as i find large doses take longer to absorb.
