To be honest, it's a couple of decent dollops, although I do tend to measure the spices for a consistent flavour. I buy a ginger/garlic paste, so I can be really lazy and still have delicious nosh!
 
I get the packs of chicken thighs which are ridiculously large and cheap. I cook them in the Tefal Actifry and they are so succulent, with crispy skins - there is enough for two or even three meals - though the skins seem to evaporate almost as soon as taken out of the pan. 🙄
I much prefer chicken thighs to breast, just so much more tastier!
Made a beautiful chicken alfredo recipe tonight from Headbangers Kitchen!
So good and only chicken, garlic, mushrooms and double cream...... Absolutely delicious!

That sounds like my kind of recipe,its that the one described as keto chicken alfredo on thier website.That's a perfect dish for me as I love all of those ingredients.I'm a carer for my mother surviving on carers allowance and so it's nice not having to buy anything exotic as funds are tight:( I've bookmarked it
 
Well, you can't go wrong with a chicken curry - I do many varieties. I also like chicken stir-fried with lots of veg, some soy and a bit of oyster sauce. Tonight we are having Tom Kerridge's "Chicken with mushrooms and peas".

I also like to slice the chicken breast and add a slice of stilton. Wrap in streaky bacon and roast for 30/35 minutes. Meanwhile add the left over stilton to a pan of crème fraiche - makes a wonderful sauce. I usually serve with fine beans and asparagus.

Apologies if this is a stupid question. How do you know what's a sensible amount of fat per day (creme fraiche, cheese etc) if you're trying to lose weight? I'm aware that we are both trying to shift the pounds hence the question 🙂

As at @Anitram says no stupid questions on here. I don't count calories is the simple answer. Portion control and low carbs is my approach. Portion control is not usually a problem as high protein high fat foods tend to be very filling and, most importantly, keep you feeling full as they are slow to digest. The only time I struggle is if I cook too much of something extra yummy and go back for a second helping.....even though I'm full. Then I finish up feeling bloated all evening and the scales usually suffer the following day

I think you're right. I'm looking for the holy grail to low carb and losing weight & it probably doesn't exist. So used to "eating plans" but then where did that get me to lol??!
