Swede is very tasty mashed with cooked onions, and then dotted with butter and lightly grilled. Not sure how admissable onions are re diabetes though??
I tend to use raw onions finely chopped or blended as that gives the maximum impact, rather than cooking them for any length of time. The only exception is liver and onions. Even with lots of onion gravy and mashed swede it doesn't cause a spike.
I'm going to have to go out and buy liver tomorrow.......
