This thread started me on some celeriac research (it doesn’t take much to trigger my curiosity on a wet weekend).I don’t find the flavour of celeriac strong at all! And for me it has a flavour of its own, sort of celery-adjacent, but (for me) not as strong as celery can be, and lacks that slight sharpness/astringency I get from celery. I’m not even sure I think it tastes as strong as swede?

Apparently, the flavour strengthens the longer the bulb/root stays in the soil. Younger, smaller celeriacs (is that the plural?) are not as strong.
As celery is one of the few things I would pick out of a casserole, maybe I am more sensitive to the flavour. I am not convinced it would be worth trialling a baby celeriac.

It can be a sloppy as a mash up. Certainly not a “woody” in texture as it’s relative the celery. (Which I personally enjoy with a salad or in addition to a stew. Massive fan of salad myself. Called a “hippy” in my youth by “dietitian” DSNs. Screw ‘em. I’m still here with everything working. I temper it with some meat based protein. Celery. Oh ok that's good to know actuallyI make Celeriac chips in an air fryer. Works quite well, especially if rubbed with paprika beforehand.

If you find pork or beef appealing? Mix it up. Balance for satiety? & let your meter be your guide on the BG results. Look for your personal trends.
