Celeriac back on the menu......

Type 2
When first diagnosed with type 2, I dropped potatoes, pasta and rice as real no,no’s. I latched on to celeriac, courgette spaghetti etc. as alternatives, but frankly got a bit scunnered and bored with them. With a bit of trial and error I’ve discovered what I can tolerate in terms of potatoes, brown rice and wholemeal pasta. However, I thought I would give celeriac another go. I made a mash with celeriac, cheddar cheese and a good teaspoon of mustard and used it like mash on shepherd’s pie ( instead of the usual meat, I tried sausages (good quality), mushrooms and peppers, in a little chicken gravy. It was very tasty and easy on BG.
 
I haven't tried this myself but I think that you can roast a whole celeriac (goodness knows how long for ) and scoop the flesh out perhaps cut it in half and serve in the skin ?
