I have been reading alot about swapping Cauliflower for potatoes and also cauliflower squash. Instead of mashed potato on a cottage pie for eg having a cauliflower squash topping instead :/ Has anyone tried this? Apparently it's very low carb and all very filling.
 
Mrs Mad - if the cauli is getting a bit old, it tastes more of cauli! Therefore if that's not to your taste or it doesn't complement whatever you're having with it - only use fresh cauli. Or indeed - frozen florets, cos they is blasted with polar air when they are very fresh !
 
Have you tried Romanescu cauli (that's what it's called here)? It's got a bit more flavour than plain old cauli, and it's really filling. I love it.😛

I actually made cauliflower rice at the weekend and it wasn't half bad, it was very fresh so didn't have the cauli whif as as I call it which turns my stomach. Cauliflower creamed with whole grain mustard and carrot is also lovely, the carrot adds a bit of sweetness that's offset nicely by the mustard. Slightly odd colour though 🙄

I do all kinds of potato swaps.
Butternut squash is my favourite, but most of the cauliflower/cabbage family are good also. Never do roast potatoes, I roast parsnips or sweet potato (not my favourite but guests like it).
Shepherds pie is usually topped with 60% white cabbage / 40% potato.

We are away on a cruise for three weeks starting on 6th April to celebrate my other half's 70th birthday and my routine now is to max the veg and shun the potato. It seems to keep me celebrating but balanced.

I love me veg, and it can be really filling, so you don't need to feel you're missing out. The problem is we all remember being force-fed overboiled cabbage, etc from school dinners, and it puts us off. My hubby's BIL is adamant that he "hates vegetables" (he's T2), but I think he'd change his mind if you plonked Kooky's cauli (for example) in front of him. There's a niche in the recipe book market there, I reckon, that needs filling: exciting carb-free veg alternatives for hungry diabetics. (I'm having a Homer Simpson drooling episode just thinking about it).🙄
 
Celeriac makes a decent mash too and it's also very good roasted in chunks. It's got a slightly sweet taste but seems to go with fish or meat OK 🙂
