I’m going to make this tonight for the first time but I’m a bit worried about the carbs. I was going to just make it with cheese and double cream and roast it in the oven over the cauliflower. Anyone have any other recipes?
 
Don't worry about Carbs in it. Absolutely minimal. Make it! 🙂

Better with cream cheese than with double cream, in my opinion.
 
Whatever cream you use, it sounds lush! :D

I made it with garlic cream cheese, double cream and cheddar. It was really nice we will be having it more often.

made a lemon posset tonight with sweetener and left over cream, realllly looking forward to that
 
Sounds lovely @bakebeans - I must buy a cauliflower... I mean I was diagnosed in December! Ha ha... always seem to get to the supermarket too late and there is only a sad looking, discoloured, wilting one left.

Lemon posset recipe please and do you know the carb value? 🙂
 
Waitrose have them for £1 at the moment and they are massive. Iceland are £1.49 and Tesco’s £1 but are always tiny.

lemon posset is double cream, sweetener and juice from 1 lemon not sure about the carb count as I didn’t measure anything out when I made it. Was just an experiment. Stick it all in a pan and stir constantly let it simmer for about 3 mins, make sure it doesn’t explode like a volcano! Take it off the heat and let it cool a little then pour into a dish, I used a wine glass. You don’t need much as it’s very rich about an inch and a half. ThenI added a little whipped double cream and a couple of black berries on top
 
I have been told that this is a good recipe, so - take cauliflower and cook it until almost done, then put it into a warm dish, cover in cream cheese, then throw on grated cheese - a strong blue cheese can be crumbled on top, and add whatever spices or herbs you fancy. Return the dish to the oven and heat it gently to melt the cheese and get it just slightly golden.
 
i like baked cauliflower... (with added broccoli, half and half, optional) cut into florets, drizzled with melted butter which has been heated with crushed garlic, drizzle over veg, then bake inthe oven for about 1/2 hour - delish

If there are no decent Cauliflowers left, you can always make the Broccoli version of it - I like both equally.
