Dairy ?? is that because you are lactose intolerant in which case have you tried the lactose free cheese or vegan cheese and lactose free yoghurts.
Sounds tricky if you are unable to have a variety of veg.
You may find that by testing before and 2 hours after you eat you may be able to tolerate small portions of foods that you are excluding.
I think when people have restrictions on what foods they will eat for whatever reason then testing is even more important.

Yes I have a lot of soup. I am retired so try to make my own. However within an hour I am starving

Could you have soup as one course and make some other courses to fill you up? Eg have soup, then have a couple of rice cakes or oat cakes (around 10g carbs in total) with, say, some cold chicken and coleslaw and then a few berries or something like that? You could even grate a carrot as a ‘starter’, then have the soup, then the protein plus rice cakes or oatcakes, then a few berries or a square of dark chocolate. That makes it into more of a meal.

I keep it all very simple.

Lunch could be soup, egg or sardines on toast.

Supper could be mackeral,
poached salmon , vegetarian sausages, all served with a ton of steamed veg.

As long as I don't feel hungry , job done. It was trial and error in the beginning, a food diary and lots of testing to make sure my BG could handle the food.

I see looking back you have been struggling for a long time with diet because of your intolerances and 'hatred' of vegetables. Are you still taking the gliclazide and metformin, I wonder if the metformin is not too good because of your IBS.
I suspect the reason you are hungry is you may not be having enough fat in your diet if you are not having dairy, and as you say there are so many eggs that you can eat without clucking.

Yes you are right. Whatever I do it is wrong. I don't have enough fat but don't know what to do about it? I have suffered IBS since I was 26. I am now 58. I think it's connected to my anxiety and Depression which I have suffered from for the last 35 years. I do feel like clucking lol especially as I eat a lot of chicken too How much carbs are we allowed per day? Thanks for your help

The suggestion is no more than 130g per day carbs not just sugar, but some people do need to go lower but would determine that by testing the effect of their meals on their blood glucose with a home monitor.
