Relationship to Diabetes

For the past month or more I don’t tend to carb and cal count because I pretty much know what I have. Got it down to a fine art these days, and my numbers are good.

I just wanted to tell anyone who might be interested, and therefore find this helpful.

I have the Diabetic carbs and cals book recommended by this website, I also have the recipe book. Recently, however, I purchased one of the Italian chef Caldesi’s books written by him and his wife. I hope my post helps others but I find him a very inspirational man, and just what I needed. I am from an Italian/Maltese background brought up on the type of food Giancarlo does and would also have been brought up with. Very inspirational and plain talking. I fully intend also buying his quick 30 minute meals book. He was diagnosed type 2 in 2012 and completely changed his diet and reversed his type 2.

While I have no idea if I will reverse mine, I will be pleased if my diabetes is controlled, time will tell, but I am very content currently.

I hope others find my post interesting and helpful.
 
The Caldesi books have been recommended many times here and they have some great recipes and their ethos is one that is easy to adopt. Even if you don't follow to the letter there is plenty of inspiration.

People have also said their vegetarian recipe books are good, too.
 
I use them all the time, and today had a recipe from one of their books for lunch.
Some of them are very easy to make and delicious.
I make the ancient grain bread from their Italian cookbook.
These books, plus the prefaces by David Unwin, helped me get my hba1c back to normal levels very quickly and I lost 3 stone.
 
Thanks everyone I agree with you I adapt some recipes for example I never eat anything ither than chicken and fish. I make the tomatoe sauce and poach eggs in it, also add peppers and sprinkle parmigiano over. Love the recipes they are very easy to adapt and delicious.
 
I just thought I would add. Sometimes I get very bored with different ways if cooking chicken, and I often hate the smell that permeates when I cook fish. But, I find it very unpalatable in my mind to even contemplate eating/preparing any recipes containing red meat, lamb or pork and other non chicken and fish meats. I have been this way since I was 5 years old. So sometimes I am very stuck, and often do not enjoy my food. This book in terms of changes is good for me, but it is obviously not just chicken or fish so I have to skip through a lot of pages. It seems a waste somehow.

Yes I have been doing that recently, in fact I love cheeses but only this week bought halloumi for the first time.
 
Thank you for the recommendation, I’ll have a look at that. I also mainly eat chicken and fish, I limit red meat to once a week.
