I am vegetarian as well but with a catch! I hate vegetables, so any tips of types of food i could eat would be appreciated.
Sorry I'm just newly diagnosed so it's a lot for me to take in.
As I as I am a veg lover with a different type of diabetes, I am probably not the best person to advise.
What is it about veggies that you dislike? If it is the flavour, I would suggest using herbs and spices to change the flavour. If it is the texture, I would look at different ways to cook veggies. For example, cauliflower is one of my least favorite but it is much more tolerable if I bake florets in the oven making them nutting rather than the misty flavour of steamed/boiled/fried/raw cauliflower.
With type 2, the usual advice is to eat more "above the ground" vegetables. However, there are lower carb swaps for potatoes that a grown underground such as celeriac and swede which can be chipped and roasted.
Pulses are a common veggie staple. Different people digest lentils and chickpeas differently. Some of us extract the carbs (which can lead to raised BG) whereas for other they just "pass through" so your BG is unaffected. The only way to find out is to eat and test your BG.
