I assume you've drunk the other half by now! The answer is, wait and test, and see! If it's not good, then don't do it again! I find Latte raises my Bgs quite suddenly even without caramel, it's partly the carb in the milk, and partly the caffeine in the coffee. I tend to stick to decaf Americano if I'm caught out without my insulin.

Posting from a phone (or tablet) always risks auto cat rectal problems. 🙂 The occasional caramel latte probably won't harm you -- we all need a treat sometimes (I wish I could get my carer to understand that).

I buy the amaretto syrup from Waitrose to include in my coffee (it's better than the monin rubbish). But I only have the merest hint added.

It is my treat every other day (used to be every day, but I'm cutting back!).

So, go for it, I say!!
