I see Stitch and the Diabetes Fairy having been having fun with butternut squash!

How to avoid amputation of fingers 😱 when dealing with a butternut:

Put whole thing in medium oven for about 30 mins. When you remove it, it's soft enough to cut the skin easily and you can scoop out the seeds and flesh with a spoon.

So much easier. 🙂
 
What a good idea, I may try making some soup myself. I was down at a local restaurant today and they had it on the menu so I tried it. Lovely, they had added some curry spices and served it with a paratha (I only had a little bit of that - too much carb for me in a whole one).
 
That's a great tip Susan, my veg peeler makes peeling one easy. Will definitely try this method though.
