Butterbean Mash! Better than Potato mash and its low GI

🙂 ~Serves 2, or can be used as a topping for shepherds pie alternative to mash potato.
Ingredients:
1 tin or 250grams of Butter beans (if using dried beans make sure you soak them over night first.)
1/2 Knorr Vegetable stock pot (not stock cubes as they are very salty
1 teaspoon of whole grain mustard
Either a small handful of finely chopped parsley or small handful of spring onions chopped.
optional: If you find the mixture very dry, add a very small amount of Olive oil

Seasoning: Personally I do not add salt as the stock pot has salt in it. sometimes I add ground black pepper, but do what you prefer most.

Method
1) Cook the butter beans in half a pint of water and 1/2 the knorr stock pot.
Once the beans are soft drain the liquid most of the liquid (leave about a dessert spoon of liquid in with the beans.) (the liquid you do not pour away is to moisten the mixture as it can be dry with out it. if you do find it dry you could add a few small drops of olive oil)
2) Mash the beans until they resemble mash potato
3) Add the parsley or spring onions and mustard and mix well.

Serve as a potato alternative or spread over savory mince to make a superb shepherds pie. ENJOY!

Sounds good that! I'll be giving that a go!

Just the calories that I'm a little bit worried about because I'm still calorie counting to lose weight.
