Probably old hat to you seasoned veterans but for any newbies thought I’d share this.
I can’t eat any kind of bread, my readings shoot up and stay there for hours, even before I was diagnosed I knew that bread made me feel ill and upset my tum.
recently discovered buckwheat pancakes - they have marginal effect on me, perhaps 2 points within first hour then straight back down to pre eating levels and taste nice.
3 tbsp buckwheat flour, 1 tbsp of almond flour, an egg, 75 ml milk, bit of baking powder and on the flat plate for a minute either side. topped with Greek yogurt and berries even my non diabetic partner says they’re a treat.
