Hi,

My MIL is Type 2, taking Metformin 500mg before her evening meal. I'm looking for breakfast ideas for my MIL as she currently has weetabix which she says has no sugar in but she's getting a bit fed up of always having this.

I'm normally a porridge man (with nutmeg/cinnamon), but for a change I go for steamed cod and scrambled egg (with a few herbs thrown in).

Eggs - with or without bread? - has she tried Burgen Soya & Linseed?

Bacon, boiled ham, cheese on or off Ryvita - what does she like?

Frittata made out of as many eggs as you like with any protein and veg, made on Sunday and stored in the fridge, cut in slices to have when she wants.
 
I sometimes go for the Burgen toast with wafer thin pastrami, very tasty and a nice change from the eggs I usually have.

mmm.... waitrose sell a lovely frittata with chorizo in it, I often have for lunch. Cheerios don't make me spike like other cereals do. Burgen toast with marmite is nice too.
 
Have to agree with Cheerios. They are the only cereal I have come across that don't spike me, taste ok without the added sugar and are not hard to digest unlike Allbran!
 
Another vote for the cheerios if she likes cereal! I sometimes have Berries/ Apple covered in yoghurt or scrambled egg with Burgen or Nimble bread 🙂
 
beef stew is surprisingly good for breakfast 🙂

there is another thread somewhere about it. Ozzie guy (John?) recommended it sometime around the spring last year. I cook a big batch and put it in small containers in the freezer

I usually have it once or twice a week and it doesn't spike me at all.... unlike bread or cereals of any kind which spike terribly

try it...... honest it is good. (teenagers eat cold left over curry at breakfast don't they?)
 
Why aren't you cooking your own fritata Phil? You can then have what the heck you like in it and it keeps in the fridge for about a week!
