Bread, Mix flour with low carb alternatives

I was just wondering if anyone in an attempt to lower the carbs have tried mixing traditional flour with say almond flour to end up with something resembling bread as we know it but with lower carbs. I ask as I've tried the low carb alternatives and have been less than impressed even for recipes people seem to swear by. One of the biggest problems is ending up with a stodgy mess that is barely edible. The Freshwell Clinics 'Fat Head dough balls' bread was by far the tastiest but is too expensive for me to make on a regular basis.

I found the problem with adding almond flour was it was quite sweet and made something more like a scone.
Using a normal bread flour but one with seeds and making it in a small loaf tin so the slice would be smaller so less carbs per slice. Wessex Mill do a few good ones.
Keeping your eye out for the lower carb breads in the supermarket, generally the seeded breads with smaller slices or if you want to use in a sandwich just use 1 slice and have an open sandwich.
A modest reduction in bread intake if you are prediabetic may well be OK.
 
I make conventional bread plain white or premixed wheat flours with seeds or other conventional flours as part of the mix. I also make small, 500g loaves to get smaller slices. I control the carbs by the amount of it I eat. One slice a day as toast for my breakfast. I find that has no adverse effect on my BG.

For lunch I have got into the habit of making samosas. Every few days I make a small batch of chapatti dough and a batch of spiced veg for a filling. Each day, pinch off some dough, roll it out until it is very thin, make some veg parcels and fry them for a couple of minutes on each side. With some cheese or cold meat, salad, coleslaw and kimchi they make a decent low carb plate along side a bowl of soup. No need for bread either conventional or "low carb"

Fundamentally, the idea tying my self in knots making something with half the carbs so I can eat twice as much of it does not work for me.
 
Yes I did find "The Heart of Nature Pure Grain Gluten Free Bread" which only seems to be stocked by Waitrose. But I'd really like to make my own bread which would be a little less dense with larger slices as I'd like to mix it up with the heavier bread. But I will also need to be less reliant on bread and forward planning is key which I haven't been the best at. But was curious if anyone else had also mix and matched flour mixes.

Can be @everydayupsanddowns - especially when opening a new batch of kimchi or I have over spiced the veg for the samosa.

My main point is that you don't have to have special "low carb" recipes if you are looking for a low carb diet. Just mix and match from whatever takes your fancy and either avoid high carb stuff or don't use much of it if you especially like it. The samosas work well - nice crunch and flavour and if you roll the pastry thin enough you can make a couple from about 20g of dough. A big reduction on the carbs in 60-80g bread roll that they are a substitute for.

My next experiment is sourdough. Never made it before but I have a starter going which seems to be developing nicely. Should be ready to make a levain in a couple of days and then onto some bread.
 
I tend to have ryvita crackers instead of bread for lunch. I do have a slice of toast with 2 poached eggs for breakfast occasionally. I tend to use almond flour for homemade waffles as a 50/50 mix with plain flour which significantly reduces the carbs but still tastes good.
 
I struggle with bread of any type which uses grain based flour. I only have to look at it for me BG to rocket up towards 12-13.
Someone posted a recipe on the forum for a flax seed bread which used Vital Wheat Gluten. I have been playing around with that recipe as I found the end result a bit too elastic for my liking. My current version of the recipe which still includes the Vital Wheat Gluten uses almond flour and cold milled flax seed, eggs, psyllium husk and yeast and I find that this provides me with a good bread substitute and it is quite low carb. Let me know if you want a copy of the recipe.

Sadly I don't have the time to bake bread products and so just put up with the cost of buying my low carb bread, rolls and wraps which I have delivered on monthly subscription. Carbs are couple grams a slice, about 3 for a roll and 6 for a wrap, works for me.

Attached is the file with the recipe. And thanks also to @Lisa65 who provided the original recipe on which this one is based. I use Linwood Cold Milled Flaxseed which you can get from Tesco and other supermarkets (and H&B) or Costco who do a big back for the same price as Tesco.
