Two things Carolann: firstly, you should be able to enjoy the whole egg - you are on basal/bolus insulin so should be able to allow for the yolk. The carb in eggs is tiny anyway - they are mostly protein so it should have virtually no effect on your levels. Secondly, you should not be overly worried about dietary cholesterol either. Most cholesterol is created by the body itself, not from what you eat, and it is thought that if you consume more dietary cholesterol then the liver will simply produce less, so the same balance is maintained. What is important is the split between good (HDL) cholesterol and 'bad' (LDL) - if the balance is good there then having a slightly elevated level overall should not be a cause for concern. For example, my last total was 5.2 - I'm not on statins, but my GP and consultant are both happy with the situation because my split of HDL/LDL is very good.
So I wouldn't go to the extremes of fiddling with the yolks personally, especially if you like them! Remember, cholesterol is essential to every cell of your body - it is not a terrible thing to have, you actually need it to live! What is your current level?
