Blood glucose around 8.8 after a heavy meal, it's been about more than 3 hours.

Really disappointed by this as I thought I had been making great progress. I ordered some baby corn dish and a mushroom one. I think they are lightly friend in some kind of batter but they never seemed to spike my BG before. In any case two readings have now shown about 8.8 range. I did take my metformin earlier.

I'm worried I will never go into remission. I've lost so much weight about 30 kgs since December but I am still clinically obese. I even been having some Baskin Robbins No Added Sugar Ice Cream which has honestly had little if any effect on the BG levels. I'm just shocked the friend baby corn and mushrooms did even though they don't appear to have done before.

What am I doing wrong?
 
@Purple_Panda firstly, congratulations on losing so much weight. That is impressive and something you should be proud of.
Unfortunately, there are many things that can affect our blood sugar levels - it is not just the food we eat. It could be stress or illness or weather or time of the month or drugs or exercise or ...
You may want to try the baby corn again when things are different or decide baby corn is not worth the effort and put it down to being a positive learning experience.

Diabetes can be tough, it rarely behaves exactly as you expect it but it sounds as if you are doing really well. Please don't be disheartened by one small hiccup (8.8 is not that high).
 
30kg weight loss is amazing @Purple_Panda ! You should be very proud of that! Don’t let your 8.8 get you down. It’s probably just a blip. It’s not awfully high either. Either avoid the sweetcorn or try again to verify the result.
 
Well it's strange I just tested it now and it's 6.6. The food was rather greasy to be fair but I'm just surprised it was like that so I think it were the fried mushrooms that did it.
 
Hi, I've just experienced a similar problem. I took a blood glucose reading just before eating and it was 6.0. And I was so fed up of eating mainly proteins, above ground greens, salad stuff, and really cutting down on carbs, I treated myself to a small German Rye sourdough loaf from M&S, plus some of their Prosciutto di Parma Ham, and arriving home had two slices of the bread (weighing 107 grams, 41 carbs), spread with real butter, and piled high with the Parma ham. And it was to die for after weeks of not eating many carbs. Anyhow, took a reading after two hours, and it was 8.5.
I'm pre-diabetic, not on any medication, and trying to get my blood glucose readings lower, but eating two slices of sourdough rye is obviously not the way forward. But it was so delicious I found myself wanting more. Hi-lo bread doesn't hit the button in quite the same way. Help!

Mushrooms are very low carb - far more likely the batter or the corn, or both, were the culprits.
