I have assorted digestive problems too, and I seem to remember talking to someone else on here who had gastritis, but she was vegetarian, which made things more difficult. If you eat meat, fish, and eggs then I'd try to eat as much as possible of those along with smaller portions of the white rice and bread, and never have the white rice or bread without something in the way of protein or any fat you can tolerate to slow the carbs down. My Mum (who has diverticulitis, which requires a similar diet to yours) and I can both tolerate yogurt, it seems to be easier to digest than other fat - she eats a fairly plain Greek style yogurt every day. Mum can't eat leafy vegetables at all, but she can tolerate carrots and parsnips, so maybe small portions of those might be feasible for you - I know they're carby compared with other veg, but they're not very carby compared with white bread and rice. Boiled potatoes would be lower carb than white bread and rice too.
