I checked my BG prior to eating, 4.8 Fine.
Ate my lunch, which was a poached egg, cuppa soup and 1/2 an avocado Waited 2 hours and tested, the result was 4.9. One could say almost the perfect meal, if a little boring.

Sounds great, nice one.
But bear in mind the meters can be out a bit, and are not 100% accurate, assuming you are using a BG monitor via finger pricking?

What could you add that's (comparatively) low-carb and yet tasty, to make it less boring?

It's for a quick easy lunch i sometimes add a cracker with peanut butter. Don't have too much tiime. It was simply the pairing that was almost a twin result that amused me.

It's an accu check monitor Nice and simple :D

Thats pretty much my standard low carb dinner when i want no drama- half a avo, 70g toms, basamic dressing, with fried egg and 2 linda mccartney veggy sausages to mop up the yolk. 8 carb, pretty much flat line with one unit insulin intovthe stomach area just before eating.
I find i have same sort of flat line with 100g caulirice and a veggy stir fry
