BG drops after meals

In the meantime, you could consider moving your Lantus to first thing in the morning instead of at 8pm. Lantus has a peak of activity about 5 hours after injecting so you are getting the most activity from it when you are sleeping, which is when many of us need least insulin, as well as tailing off during the day.
I love my Levemir for being able to adjust the morning and evening doses independently but my day/night split is significantly different... 22 units in the morning and anywhere from 0-5u on an evening depending upon how much exercise I have done that day. My nighttime levels are very sensitive to insulin following exercise, particularly doing exercise on consecutive days and I often have to drop it down to 0 and then build it back up when I am more sedentary. I have to inject my morning Levemir as soon as I wake up and before I get out of bed plus 1.5-2units of bolus insulin to deal with Foot on the Floor rise, so my insulin is under my pillow ready to jab the minute I wake up.
