Best way to cook....sweet potato?

I roasted them in the end - they tasted sooooo nice 🙂
 
I'll move this into Food / Recipes section. We eat sweet potato quite often, usually cut into small cubes with equal parts of swede and "regular" potato, sometimes mashed.
 
Sounds nice Emma , still prefer mine baked in the skin
 
One time I baked mine and put chopped up onions in it - had a random onion craving 😛 That went really well.

Otherwise I mash it, normally with pepper. It also goes nice mashed with carrot.

And sometimes when I cook up veg I first soften it in the microwave then cut it up and bung it all in with some sauce, dolmio stir ins are my fav 🙂
 
Lightly scrub the sweet potato skin and drizzle with extra virgin olive oil, bake in a hot oven until ready. Alternative cube and drizzle with oil and sprinkle with some mixed herbs and black pepper and roast in a hot oven till ready.

Sweet potatoes are my favourite!! I eat them in so many different ways...

1. Steam like normal potato with carrots for about 20 mins and then mash together, either eat as mash or use it as a low GI topping for cottage pie etc.

2. Scrub skin and rub with rock salt and bake in the microwave for about 10 mins then move to the oven for 10 mins to crisp the skin a little! Yummy!!

3. Cut into small chunks and sautee in a frying pan until crisp and brown!!

4. With other root veg (carrot, parsnip, beetroot) cut into chunks and bake in the oven with olive oil, rock salt, rosemary and pepper!! Delicious!

Sweet potato is great for your levels because of its slow release carbs!!

Ooh I had this the other day, was gorgeous! Definitely recommend it to others and i'll be trying some of your other ideas 🙂
 
I usually bake mine with marg and hummus on top and have a salad. Its also nice chopped and added to veg roasted in oven with garlic and olive oil.
 
Just found this recipe for sweet potato mash> serves 4

15 oz sweet potato,peeled and cut into chunks,
12 oz of bramley apple, cored and cut into chunks
1 pinch of sugar (I would leave this out)
3 tbsp water
1oz butter or marg
1tsp dijon mustard
s&p.

Boil the sweet potato in a saucepan of salted water (I would miss the salt out)
bring to the boil and simmer for 15 mins until soft. Drain well return to the pan and mash until smooth.
Meanwhile put the apple in a saucepan with the water and a pinch of sugar, simmer over a low heat for ten mins until soft, Beat in the butter.

Mix together the potatoes and apple, stir in the dijon mustard and season with S&P.
 
Things I Do With Sweet Potato:

Roasted Orange Things:

Chop equal quantities of speeled sweet potato, carrots, butternut squash and swede into 2" chunks (you need BIG Ole Carrits fer this! :D)

Pop them in a lage poly bag with a couple of teaspoons of olive oil nd a squidge of minced garlic and some chopped herbs. Squidge them arround in the bag until they are all well coated. Stick them in a roasting tin and roast like roast potatoes.


Cottage Pie topping:

Boil equal quantities of sweet potato and butternut squash. Mash and stir in a couple of tablespoons of fat free Greek yoghurt and half a teaspoon of nutmeg or mace. Use as a topping for turkey mince cottage pie... (I also use left-over Roasted Orange Things like this... )

Chips!

Peel and cut into chip-sized chunks. Pop in a poly bag and add a couple of teaspoons of rapeseed oil. Squidge untill all coated and spread out on a baking tray and bake at 200C for 30 minuts.

You can make lovely curried chips by adding a heaped teaspoon of curry powder, some prepared garlic and prepared coreander to the bag and giving it a good squidge about.
 
Do T1s find they're forgiving on their blood sugars after eating?
 
Defo mashed with butter and potato i mix mine with swede also. I chop the swede small boil it and mash like potato and mix with the sweet potato and its called 'potch' in Wales lol lovely with butter and pepper 🙂
 
I do roasties and make crisps with mine as well. It's so versatile, I love it cut into wedges, dredged in Cajun spices or Jerk seasoning and then baked in the oven.

I've heard that, but I've also heard that it's an urban myth; according to the latter source, you need to be taking tons of the stuff to have any effect.
 
I cut it into wedges, coat lightly with Olive oil, dust with cajun spices (schwartz) and bake for 20 to 30 mins at 180.
