The pasty looks interesting - have you made it with almond flour (which I guess would go great with the bakewell flavour)?
I am intrigued what you did with the raspberry jam.

Yes, I used almond flour, I was going to make some jam, but I cheated instead and used some Cherry Bakewell food flavouring in the pastry, tastes like it has got jam in it

You can find the recipe on sugarfreelondoners website, it uses almond flour ( ground almonds ) and coconut flour. I too bake every week, but apart from a couple I give to my diabetic work colleagues, the rest are for my lunchbox each day at work.
