Alternative to Cauliflower Rice

It’s really really strange but definitely worth it.
I personally don’t think I could have it plain but definitely good with a sauce or seasoning.
I have some of the Noodles to try too.
I'm used to the noodles now, my partner makes a mean bolognese sauce and it's nice to able to eat the same meal together without a huge rise in BG. They don't soak anything up like normal pasta and they have a slightly rubbery texture, but I find them acceptable and I guess the extra fibre is beneficial 🙂
 
As an alternative to cauliflower rice, a stir fried selection of cauliflower/onion/cabbage(savoy, white, red)/swede/chopped tomatoes/etc. is my go to base for sauces/meat and chicken leftovers/tinned fish/etc. when home at lunchtime.
