ALMOND FLOUR BISCUITS ~ GLUTON FREE

I have a no cook kind of biscuit. You need ground almonds (almond flour), unsweetened peanut butter. I prefer the crunchy peanut butter. Thick honey, not the runny kind. I am afraid I do not have the amounts as I do it by sight but the main ingredient is the ground almonds. Mix some peanut butter with honey and put in microwave just to soften. I have tried them with a little honey but I am wondering if they would be just as nice without it, or even sweetener. Then mix the softened peanut butter and honey into the ground almonds until you can make a stiff ball. Then take small amounts off, roll into small balls, put on a tray and flatten to the shape of a biscuit. Put in fridge for at least three hours and they are ready to eat. They are more like peanut cakes than crunchy biscuits. As you can imagine you do not need many as they are quite filling.
 
These look lovely. They are like scones/rolls of course not biscuits, as in US biscuits are called cookies.
