Air fryer

Hi - None stick mats ( silicone ) are not great for letting the hot air circulate around the baskets and most professionals advise not to use 😳 they can cause uneaven cooking even though they keep the basket(s) clean.
Each to their own I think 🙂
You can also use any ovenware in the airfyer such as ceramic and tin too so no need to buy liners if you already have ovenware.
Forgot to mention. The mats have lots of holes to let the air circulate. I only have a few baking dishes that fit the baskets so I find them useful, but as you say each to his own.
 
I have one of the original Tefal Actifry models which has a paddle to turn the food as it cooks and it makes the best chicken thighs, then I put mushrooms into the pan once the chicken is done and being kept warm, so the juices are absorbed. I have done stir fry a couple of times but mushrooms are the better option.
We used to have a 'fire oven' and it cooked really well - but it did require the flues cleaning out regularly, and we had it from new, plus my mother's mother cooked on a 'Yorkshire range' so my mum grew up with the knowledge of how they should work.
One house I visited had a similar cooking arrangement, but it only got hot on one side. I worked out how to take it apart and found that the flues were blocked with bricks and it had been assembled with the small and large ovens the wrong way round.
Once put back together correctly and lit, all the temperature dials started to move, and by the time cook arrived to do lunch it was all hot, as were the radiators in the housekeeper's sitting room and the butler's pantry. I had to leave soon after, but was sent a box of chocolates. I think I still have it somewhere as it was constructed like a jewellery box, and I didn't have a real one. (Still don't)
 
Chicken is wonderful in the AF, but keep the skin on for heaven's sake. And gammon - best crackling EVER in the AF. That goes on the rotisserie so, it bastes it's self and there's 360 degree crackling - no soggy bit where the joint has been sitting on an baking tray.

Cooked whole chicken earlier in air fryer, oil on skin then seasoned it then placed it breast down in fryer draw then cooked it for 45mins at 180c, then turned chicken then cooked it for further 20mins at 190c.

Result wonderfully cooked juicy chicken with lovely crispy skin, with preheat that would have been 2 hours in standard oven. Did roast spuds & yorkshires after in fryer so oven never got switched at all, over year should help reduce electricity bill a wee bit.
 
Did roast pork last night for the first time in air fryer. Crackling was to die for!!!!!!! I'm not totally converted but would do it again. Roasties and parsnips went in while joint was resting. Veg on the oo,er although I could have used microwave.

Must admit crackling is very good done in air fryer.
