Hello K, the overthinking thing is very easy to do. I have changed to a lower carb way of eating since diagnosis and learnt so much about it on this site, but have realised that sometimes I don't quite trust myself about the carbs I've eaten. I think I have some idea of what you're feeling. It might be useful to keep a food diary, if you aren't already. I kept one religiously for the first few months, listing what and how much I'd eaten, and the relevant carbs, and found it a really useful way to keep track of myself, and my slightly uneasy feeling has only kicked in since I stopped writing it all down. I think I felt I didn't need to do it anymore as I am used to it now, but those niggling feelings of not quite trusting my own judgment have crept in and so I'm starting that again today. Perhaps the ritual of it is also a reassurance, and being able to see it all in writing stops it swirling in your mind, and causing uncertainty and unwarranted feelings of guilt. Good luck when you see your doctor, who hopefully will be constructive and help you, but by the same token if they aren't (as happened with me) then you know you've got this forum to support you.
