Advice Please - Do we think this recipe is quite low GI/GL?

Basically root veg, lentils and potatoes with some curry - it's the kind of thing K used to like but she does tend to find potatoes 'spikey' so we eat less now than we used too:(

It says serve with Naan Bread which I don't think I would do - think I could persuade her towards a popadum instead.

Looks as if the lentils would balance the potatoes out GL wise, any thoughts?

Know what you mean about Naan Bread :( Last time we had veg curry(no potato)she had rice, Naan AND popadums - rather a large dose of Novarapid was required (her ratio is 1:5 in the evening😱) Which is why I was looking at the recipe with potato in - thought it might be a bit more filling so she could give the Naan a miss. Have to buy the Naan cos OH won't eat rice 🙄

Turns out its not just teenage boys that eat you out of house and home!
 
I wonder if sweet potato would work, it's lower GI than ordinary potato 🙂
 
I've tried substituting sweet potato instead as I have awful problems with spuds. It was different, but still pretty good. I didn't spike with it at all. I'm trying to 'invent' a wholegrain naan but all my efforts so far would make great roofing tiles! I'm going to try replacing part of the flour with something, ground almond maybe. I'll keep you posted.

I don't think it would work. I think you need the gluten in wheat flour to make the dough elastic. You could make roti with gram (chickpea) flour. Much lower GI.
