Frankly, why on earth are you testing after 2 hours? You aren't a T2 producing any insulin yourself, you're stuck with manufactured stuff like the rest of us T1s. It does not behave like a normal human pancreas. It is therefore unrealistic to expect your BG to always come down to pre-meal levels after only 2 hours, with every single meal you eat. Wouldn't that be lovely?
If it had come down to pre-meal level after 2 hours - then you'll just be hypo before the bolus has run it's course - and have to eat again to stop it!
