    I think you might be underestimating just how many carbs you are having as the carbs in what you had in just a few hours would be pretty close to what many would have in a day. The suggested amount is no more than 130g per day.

    What kind of diet do you have? Empagliflozin isn’t recommended if you follow a low carb diet. Also make sure you know the signs of DKA, as it’s a possible side effect (albeit rare it’s not unheard of, I had it within a few days of starting and have heard of others).
