My weakness ... ice cream.

I’ve had my biggest spikes after ice cream and after scones with jam & clotted cream.

I’ve tried to search the forums for ”ice cream” but it’s useless. I’m told that the word “ice” is too long or too short! Any recipes anyone?

I was in Lakeland last week and saw a lovely little ice cream maker (only £19.99!), so bought it. I made my first attempt yesterday and am not entirely happy with the consistency but I’ve had half a teaspoon and it tastes good.

But I’m truly shocked at the amount of sugar! Weighing it out and seeing the quantity in relation to the other ingredients was sobering. Are there any recipes out there that aren’t so reliant on sugar or are carb friendly?
 
Try searching "low carb" "ice cream" including the quotation marks. Google will show you a zillion keto/low carb ice cream recipes.

Thanks Eddy I’ll do that. I was hoping this forum might narrow down what you rightly describe as a “zillion” hits.

Just don't put the sugar in - the basic requirements are eggs and cream, made into a custard. thin it down with water to make it whipable and add a splash of alcohol - for the texture, and what flavours you might like.

Yup. @Josh DUK - any plans to make it better?

Not at the moment, but I could see if the forum architect can possibly find some decent add ons for a better search directory.

Thanks for that. But, tbh, still not many relevant results and mostly just people mentioning cream in their posts. Not to worry.
 
I luvs ice cream, any and all. I always think of that poor fella that cried though, a famous ice cream maker who had the heart attack, he cried when he realised his life's work had been making people sick and he thought he'd been making them happy. Very sad. :(

No, no, he WAS right. Ice cream does make people happy.
 
LOL it also makes us dead in the long run I believe, along with all the other junk food I'm addicted to. Pure empty rubbishy calories that taste divine. :D
 
Don't know if this is of any interest. Sold in most supermarkets.

It used to have the word "diabetic" on the label but has now changed this due to what they term "a legal requirement". ???

I’ve seen a recipe using frozen banana and cocoa powder. Havnt tried it though
So it will be pretty high carb! Cream, eggs and berries much lower than banana.

Really? I’m a newbie but thought bananas are fine especially green ones make you feel fuller for longer to digest. Don’t remember where I read it but so much contradictory info out there
 
A few people find they can tolerate a small amount, the less ripe the better. Most people find even a small amount sends bgs high. You can find out if you personally can eat bananas - and how much - by testing.

If you are not using a meter to test, safest to assume you need to stay away from them!

I think it likely that they would need to be very ripe to make a good icecream.

Trouble is that a lot of the information comes from those with a vested interest. I wonder if your banana information came from a banana importer with a couple of ships full of green bananas to get shot of. Old cynic - moi?
