If you are okay with making a bit of an effort to make a batch of stuff you can freeze and then thaw to take each day then I have a selection of yummy choices you can prep ahead of time.

1. my keto version of Corned beef and potato pie.
2. my keto version of moussaka (it is excellent cold)
3. Sandwiches made with bread that tastes and behaves exactly like 'naughty' bread but is in fact around 2g of carb per slice so is fine for diabetics - I have two recipes for two types of bread so you can vary that - who wants only one type of bread in their lives right?
4. Pizza slices that are suitable for diabetics.

Basically nearly anything you would normally eat I can come up with a hack to make it keto.
So tell me what exactly would make you happy to take in for lunch if you could have any packed meal you'd like and then I'll tell you how to make it so it fits in with being safe for a diabetic person.

I do have a query regarding Keto food and that is that I have an underactive thyroid which I have read online means that I am unable to do the keto plan as it can affect my thyroid gland. I have been very interested in the keto plan as I thought it would benefit me to try it, and I was disappointed to find out that I can't. Please let me know if you know anything about it.

I have looked into this and it seems that the concerns are mainly with calorie restriction (not what my way of using keto recipes is about - quite the reverse) and with what is considered a 'restrictive' diet which means lack of nutrients. The way I do it means you get tons more nutrients and a varied diet - in fact probably more minerals than you'd usually get as seeds and nuts and fibre-rich foods are high in vitamins and minerals.

If you were concerned about going 'full keto' you could simply use the low carb recipes for your packed lunches so you knew you would be eating nutritionally dense food that will provide you with plenty of energy for the day without loading you with carbs that would cause you problems with your diabetes.

Just swapping out a carb rich meal or a carb rich snack for a very low carb/high fat meal or snack isn't going to do you anything but good. I would say try a few swaps and see how you do.

Personally I wouldn't go for a weight loss type keto diet anyway - I haven't lost much weight at all because I'm having more calories if anything but I certainly haven't gained and my health and wellbeing has improved. I just swapped wheat flours and starches and sugars out and swapped other choices in.

My thyroid failed decades ago, and I have never had that used as a reason not to eat low carb - just about every other thing has, so I am a bit surprised.
As Dr Atkins did not find that there was any reason to think that eating a low carb diet caused hypothyroid, I suspect that those making the claim either do not understand the metabolism of Humans or they are determined to put people off low carb eating by any means.
Any reducing diet will cause the thyroid to be instructed to slow down, by the way.
