Glucose checking + avoiding carbs.

Relationship to Diabetes
Type 2
Today after speaking to a diabetic nurse she asked me to get the machine from go and do 3 days of testing and ring her back next Friday.
Curiosity got me I checked today it was 23.5. Couldn't get hold of her.
Phoned the organisation and she said needed to get a urgent apt with gp.
But she told me to avoid refined carbs and pototos.
I'm a vegi so eat pasta rice and pototos.
So could really do with some pointers my diet can seem restrictive so just not sure what to do.
 
Drink lots of water!

Nuts, particularly Walnuts are fairly low in carbs. Salad vegetables are ok (watch the tomatoes though). Avocado.

Do you do dairy?
 
Hi @Wendy Lorraine ! You do have a rather difficult equation to balance as a veggie. Pasta, rice and potatoes will all elevate you blood glucose quite considerably so you really need to try to limit them as much as possible. Carbs, 'refined' or otherwise will turn into glucose during digestion. If you can eat fish in any form it is almost zero carbs. Otherwise you could try filling up with veg in various forms, but restict the 'below ground' veg as it is generally higher carb than 'above ground' veg. Tomatoes are not too bad, olives are good, celery also. Cheeses too are filling and low carb. Low carb berries and fruit are good, though you need to be selective as carb levels vary considerably - stay away from bananas! If you want a sweet treat try no sugar jellies with a few rasps or one or two halved grapes.
Cauliflower rice is good and quite versatile, butternut squash is also versatile - you can make brownies with both these veg. Oh yes, don't forget eggs in various formats.
There are actually stacks of veggie recipies that are low carb, but I don't have time or space to dig them out. If you have a look at Diabetes (dot co) UK you find a wealth of recipes.
 
I am veggie too. On another thread I posted a list of things I eat that are low in carbs, sorry I don’t remember the thread title but you can search for my posts I think.
 
Thanks I don't eat fish and I only eat eggs if hidden. Like a quiche or a cake. I don't eat jelly or jelly sweets due to gelatine. I've realised that I need to make some changes. So will be using this site lots. But thanks again.

Why do you have to hide to eat eggs?
Sorry, couldn't resist it!!
You can incorporate eggs into lots of things and you'll never know they are there. Veggie fritters can be bound with egg and are much less eggie looking than a quiche.
 
Suggestion for the pasta..... Edamame noodles....

Lol I just don't like the taste of egg. Haven't since I was kid. But has an ingredient I can manage. All though not to keen on frittata either. Deffo need to look into my diet more.

Ah, you are like my little boy then. He can't stand boiled egg, omelette or anything like that but has no problems with Chocolate Brownies!
