My name is Sheila. Diagnosed Type 2 diabetes in November 2016 with an Hba1c of 51. Weight 138kgs height 160cm. Advised Low Carb and exercise as I have a sedentary job driving all day.
Check up today, nurse very pleased with a 4kgs weight loss and my blood glucose meter readings between 5 and 13. Not doing readings regularly but trying to do before and after meals. Already feeling much more energy and asked for an exercise referral - unheard of for me!!
Just tried a recipe of Stuffed Cabbage with mince and was delighted to find it tasted great and very filling, even the fussy hubby agreed!!
Need some more ideas to take for lunch boxes and low carb meals please.
 
Welcome @Sheila M, chicken, fish, meat etc are all quite good ideas, I made parmesan chicken breasts last night they were lovely, you could make up a wee salad pot for lunches - including greens, boiled eggs, ham that sort of thing if you like it, I'm sure other low carbers will be along to help you soon and well done on the weight loss too 🙂 x
 
Hee Hee - the Chinese - or rather - Cantonese restaurants LOL - do a version of this, certainly here in England the wrapping is individual Iceberg lettuce leaves and called Yuk Chung (pronounced Shung) - and I absolutely love it!
 
Off the top of my ancient head:
Cooked sausages. Ryvita pumpkin and oat, with pate (Tesco duck pate is very low carb) or soft cheese or peanut butter. Individual no-sugar jellies with a few bits of fruit added.

We have the sesame seed Ryvita, under 6g a slice whereas the pumpkin & oat are 7g - but the difference isn't worth worrying about LOL

Hi Sheila, welcome to the group.....

Check out the "What Did You Eat Yesterday" thread, many of us low-carbers post there.

My options for dinner vary wildly, the only thing I don't do is starchy foods.
A suggestion is Spaghetti Bolognaise but replace the pasta with Shirataki noodls (zero carb), for a bit more bulk throw some veggies in (the other night it was Edamame Beans)
If my wife packs lunch then it's usually a salad (with home made dressing) or mini Frittata), I work from a home office so I often have an omelet of some description or just leftovers
 
I find packed lunches the hardest. If I have left overs from night before I take those else I visit staff canteen and see if any suitable. Some days there is nothing, not even veg or salad, other days I'm fine. Today was a good day. Veggie sausage with sprouts and gravy! I gave the mash a miss.

I sometimes buy freshly cut roast turkey slices from Tesco in my lunch hour and put with egg free mayo in a slice of Burgen bread. I also use the zero carb noodles and pasta from Holland & Barratt with stir fries and pasta sauces. Tonight I'm having Tofu puffs in a Chinese sauce, not sure what sauce as my daughter has made for me and we've argued !
