Hi all,

Just been diagnosed with type 2 diabetes.
Still trying to get my head round it all at the moment and remember to take my medication on time daily!!
Going to really struggle diet wise I think as I am a fussy eater so looking with interest at your posts regarding meals/foods.

Saturday kitchen live had a couple great healthy meals, should be available on I player
Try not to do everything in a day, you can feel worse making drastic changes.

Ref what foods do I like unfortunately most of the ones I'm not allowed anymore.
I love meat and fish so ok with that but never been big on veg or salads.
Always tend to load up with rice, pasta and potatoes etc.
I like eggs which I believe are a good one especially brekkie wise.
 
Meat, fish & eggs are fine with us, the best veg is the leafy green type rather than the starchy underground stuff.

Sounds tough to give up on these but it's not that hard, especially when your meter is playing Jiminy Cricket.....

This suggestion comes with a caveat that you need to know what your blood sugars are doing.

You may be able to continue enjoying some of the carbs that you like but just reduce the quantity. Also, for potatoes, I recommend new potatoes (allows goodportion control) and apparently the 'best' rice to use us basmati (I am willing to be corrected if there are better alternatives). 🙂

This approach worked for me, but I was able to test quite regularly and amended the portion sizes as needed. Mind you, I also eat pretty much anything so veg was never a problem to bulk meals out.

Soups are good too (maybe even home made spicy vegetable soups!).

I find wholemeal basmati ok but must control the portion. Also a good rice alternative is bulgar wheat or quinoa.
 
Quinoa sends me sky high - even a small amount.

Just been to see the nurse, had my feet checked and she did my blood pressure and blood glucose. Despite being what I thought was good for the last week or so since starting the medication it was 15.
Got to start monitoring it from today.

I'm just catching up...so welcome.

If you're stuck for what to eat I find that a nice omelette makes a quick and delicious meal. Three eggs, a bit of ham and some grated cheese...perhaps a sprinkling of finely chopped spring onion. If you like a bit of heat you can jazz it up with some spices or chilli. You can even smuggle some veg in by chopping it finely and frying before adding the egg. A bit of wilted spinach is easy to hide in an omelette too. Yummers!
 
Cauliflower rice is really worth a try. You can make it in a food processor but I don't have one of those so I chop into big pieces and then grate on a cheese grater. I microwave it (no liquid) for 3 min. It has a very mild pleasant flavour a little sweet actually. It's low cal and low carb. Fills you up and tastes great. I tried making egg fried rice with it, worked brilliantly.

I was diagnosed on 10th August. It gets easier. Maybe think about getting a blood test monitor to see how you react to different foods?

I got a blood test monitor today, just tested pre dinner and it read 8.3 I've not eaten since about 11am. Going to test again in a while.

Just in case you weren't sure when to test, do it before food & 2 hrs after. You are looking for no more than 2-3 mmols higher after food.
 
OK, not ideal, but it will take a while to get your figures down. What did you eat?
