I want to try celariac chips and I bought a celeriac. However it seems too big for me alone, does it keep once cut ?

Yes, the cut surface browns pretty quickly, but you just cut that sliver off when you want to use it next.
 
I have celeriac chips quite often. Go well with a burger. Keep an eye on them as they seem to take ages to cook then suddenly go brown. Oh, & blanch them first for 5 mins to soften them.
