Tastes like cheesecake but its not cheesecake

I experimented on Friday night and made a dessert which to me tasted like cheesecake, OK, in fairness I dont know if it was the pregnancy hormones but I enjoyed it !

Its super easy and super simple.

I crushed a few (2-3) digestive biscuits and put about half the quantity into a wine glass (purely for aesthetic purposes!). Then poured some vanilla yogurt on top of the crushed biscuits and then added the remainder of the biscuits and topped off with the rest of the vanilla yogurt and then put a few fresh pineapple pieces on top of the yogurt. I put it in the fridge for about 20 mins. I thought it tasted yummy (like cheesecake!!!) and although it contained 3CPs, you're only really eating digestive biscuits and vanilla yogurt, so a lot less devilish than other desserts.

If you dont like vanilla yogurt you could try with greek honey yogurt and you can use any fruit that you have to decorate on top. 🙂
 
I might give it a try with my favourite Lake District quark. Yum!

Quark is a fat free soft cheese. Most brands are semi-solid, similar in texture to marcarpone. The Lake District Cheese Company do one that is the texture of extra thick double cream. The plain one has just 63 calories per 100g, and 3.1g carbs.

There are vanilla and lemon flavours, but they are sweetened with sugar. I buy plain and stir in granulated sweetener and vanilla essence. I also use it in my crustless quiche these days. The only shop where I've found all three varieties is Tesco. On offer for ?1 per 250g pot when I popped in today.

ah right I didn't know what it was but might have to look out for this I have used cottage cheese low fat in my quiche.
