I would say your fine with it my uncle type 1 has had weetabix for his brekkie every morning for the past 15 years of his diagnosis and keeps trying to get me into the stuff YUK lol.
It's possible that you might have been higher at one hour, as some people find that Weetabix has a fairly swift spike despite its 'slow-release' claims, so worth repeating and testing at one hour as well 🙂
I wouldn't be surprised if you were fine though, as your isulin resistance has clearly all but disappeared with your weight loss and exercise 🙂
I have found that 2 Weetabix in the morning spiked me at 2 ans 4 hours - BUT if I had it midday very little change!! Only found out whilst testing before/after all meals for 3 days under GP instruction.
Back in the dim and distant past a school friend used to eat Weetabix smeared with butter then add salt and finally topped with Strawberry jam.
Me and my sister used to have buttered Weetabix when we were kids in the '60s 🙂 No salt or jam though! 😱
