Saturday cooking.

Leftovers.... Mince cooked for Market on Thursday, cheese sauce from the freezer, spices from the cupboard, cheese from the fridge and Savoy cabbage needing used......a bit of fiddling and I have tonights lasagne and one for the freezer. No idea how to post a picture and DH is not quite convinced but it looks OK and I am so in need of a decent meal. Both of us are on pensions and we are not that hard up but I feel that I need to make more of an effort to cook rather than me having salady things and him having rubbish from the freezer. We don't eat / like the same so it's a wee bit complicated and his idea of helping me is ' deliverooo' which I hate and is so expensive. Lost of stuff in the freezer but I get so tired and find it a struggle to cook at the end of the day. Do I want to watch rugby?? No not today.......
 
Might just have to watch....did not realise scotland was playing until I heard Flower.......

I'm a new T2 sufferer and my husband and l try to eat similar meals but l also find it hard work at the end of a working day to cook from scratch.l miss quick pasta dishes and rice. I know there are alternatives but sometimes l miss my old diet.
Any exciting dinners would be very helpful.

You can use edamame or black bean pasta or noodles for a low carb option, they cook even quicker than wheat pasta 3-4 mins only.
 
My way of avoiding cooking in the evening is to slow cook either in the oven or the slow cooker. Stews, chillies, curries, anything as long as it can be done in one pot! I cook rice in the rice cooker which has a steamer so my partner can have rice and I can have greens, all done at the same time. Lazy but effective!

I am a huge fan of one pot, or 1 pan cooking. Why look after 2-3 pots when 1 will do, and less washing up too 😉
 
Just love lasagne.
Following a tip from a friend we use leek sheets (unrolled section of leek lightly blanched to keep it flat) instead of pasta lasagne sheets.
I like the savoury mince and cheesy sauce best.
 
30 years ago i used to make smoked haddock and red pepper lasagna. It seems to me I could use the leeks and or a pasta substitute and use my fish pie recipe I do a sort of velouté with some cheese sauce I used to add peas but chard or spinach would be better, salmon and a white fish cod or hake plus small amount of smoked haddock. It would be an acceptable alternative for the scrummy mash.
 
Well after moaning about boring recipes yesterday l made a venison casserole in the slow cooker . My husband had lentils with his and l had runner beans. It was delicious.
Thank you all for reminding me of one pot cooking.
I love venison. I had venison sausages at Christmas and despite diabetes I had them with lentils red cabbage etc. Coincidentally I had a cataract op Thursday and decided to stay in a hotel near the hospital in case of complications ( I have an eye disease which meant op was at the hospital) I walked past a Michelin star restaurant and saw it had a set lunch. Starter was venison carpaccio which I enjoyed, of course i went in but did decide not to have the two sweet and delicious desserts. I was offered a small cheese course.. I think the steroids are making me hungry or maybe I'm having a week of what the heck and being greedy!
 
I also love lasagne, and especially the burnt bits. The carb counting is challenging and whatever number is calculated the dosing rarely works! But that's become a small price for mildly burnt, home made lasagne; best cooked as a meal for 6 shared between 2: today, tomorrow and a double portion for the freezer and another day.
