I was able to get tomato sauce more than 1 dollar cheaper than my normally purchased pasta sauce and it had alot less sugar added. But it's plainer too. What spices could I add? We found some on a sale.

I haven’t bought pasta sauce for some time, preferring to make my own using the attached recipe. Adjusted basil and oregano to taste. If you want it more spicy just add more chilli flakes. Instead of pasta, I typically accompany the sauce with carrot and/or courgette (spiralised) noodles.

It depends what you like of course and also what is already in the sauce. If it is a pasta sauce and already contains Mediterranean herbs, then Indian spices like curry won't work well with it in my opinion but you might get away with middle eastern spices like cloves and cinnamon.

I agree with Barbara - I think they'd be fighting against one another rather than forming a pleasant tasting mix. There again most of us don't know what's available in the shops where you are - we watch a few people on You Tube in North America (usually fishermen or hunters) who show how they cooked whatever and blithely say they marinaded it in, or seasoned it with, things we've never heard of!

Well .... there's only one way to find out! -- try making a few small mixes

Unless you particularly want a strong curry flavour I don't think that things like coriander, cumin, or fenugreek or a general curry powder would work well, and cinnamon or ginger could be too sweet

So try dried herbs such as oregano, basil, and thyme; or paprika; or good ol' salt & pepper
If you want more tomato taste you could add just tomato paste, but this might affect the shelf life so you might have to keep it in the fridge

Sneak a look at the label to see what your usual or favourite brand uses next time you're in the store, or find it on t'Net

I haven't looked myself, but if you Search YouTube there will probably be videos about making tomato sauce so see what they use

And finally, I couldn't resist this -- tomahto, tomayto, you could just call the whole thing off!

I used to grow marjoram to go with the tomatoes,
Just thinking about it takes me back to my old garden - such a peaceful place.

Here @Leadinglights This is the recipe I use. It’s best with fresh tomatoes but this gives you an idea:

.

I've got a jar of capers and wasn't quite sure what to do with them, I think they came in a hamper last Christmas, probably out of date by now.
I think most of us have an out of date jar of capers lurking at the back of the cupboard

You heathen! They’re delicious! :D

.
I agree: luckily my partner knows how to cook them, as I wouldn't have a clue!

If you don't have capers, how do you make tartare sauce?
Ok, gherkins also.come in handy and a bit of finely chopped dill adds something extra if you have any.
Just like coleslaw, simple homemade tartare sauce is much fresher than the slime they sell in jars or give you in packets at the chippy.
