BMI has dropped a bit more. Now 21.5. Is there a healthy way to eat more? I already eat full fat everything. I have never had to think too much about food, but there has been 'some concern' regarding my weight more recently. I have never seen a dietician. Maybe it's time.

What's your daily calorie intake? I try to average 2000 a day to maintain my weight, with a large chunk of that (15-20%) coming from nuts.
 
I have absolutely rediscovered nuts. Plenty of protein and calories. They are really good to eat as well. I don't have much idea about calorie intake. As I have said I've never had to think too much about how and what I eat.
 
basically fat is 9 calories in 1g fat, protein is 4 calories per 1g protein in a food item, and carbs are 4 calories in 1g of carbs.

This is only a rough estimate and as I remember does not work well for calculating calories in nuts.
But in general food items it will give you a rough idea of the calorie content of a specific food

Define "healthy".
I know that sounds flippant but to someone with type 2, healthy is low carb, to someone with coeliac, healthy is gluten-free, to an athlete, healthy is high calorie, ...

Healthy varies according to your body and your lifestyle.
As is often said on this forum, healthy diet for someone with Type 1 diabetes is a healthy diet for someone without diabetes.

I struggle to put on weight. I find the only way is to absolutely consistently eat more day after day, week after week. I use MyFitnessPal to make sure I’m eating enough calories and I keep an eye on the total at points during the day.

Adding snacks helps too. I have cereal bars, flapjacks, cheese and oatcakes, etc mid-morning and mid-afternoon. I eat plenty of nuts and I also eat nut butters out of the jar with a spoon. Not all in one go but numerous times over the week.

Adding fat helps, eg avocados, olive oil, oily fish, etc, but the trick IMO is to keep it up day after day @JonathanGi
 
I have plenty of nuts, peanut butter, salted caramel nut bars (my absolute favourite!) and cheese. I can easily add oatcakes. I don't eat fish or meat.

Sorry @JonathanGi I did know that but forgot. If you eat eggs, a hard boiled egg plus mayo is another good snack. I like that with a slice of rye bread.

You could also add some puddings/desserts. Something like a blackberry and apple crumble plus custard adds carbs and calories, and is totally delicious. Cheesecake is also a great dessert. It’s having enough carbs and having enough calories. If you can actively (ie count them) keep that up, you should gradually put on weight. I find if I eat too few carbs, my weight just drops off which isn’t what I want. So, anywhere you can add extra calories and carbs would be good.

Things like the nut butters (try cashew butter, it’s lovely) I don’t need to carb count so I eat spoonfuls of those during the day. I also add them to milk shakes. I think you have porridge? You could try some stirred into that. If I remember correctly, you make it with water. Using milk or a plant milk will add extra calories.

Sometimes I make a dessert with one ripe avocado whizzed up into a soft mush (like a thick mousse) with added flavourings, eg cocoa or lemon. If you eat cheese, mascarpone and lime cheesecake is excellent for adding calories and carbs and not messing with blood sugar too much.

I now add mascarpone to my porridge in the morning.
I have also realised that if I look at the numbers I am about 12lb lighter than I was. So, not big numbers but I suppose it could be 10% of my original bodyweight.
