Can anyone recommend any good vegetarian recipe cook books for diabetics?
 
I just use normal vegetarian cook books, but I’m Type 1. There are lots of veggie recipes on the Diabetes U.K. site:

You could browse those while you’re looking for a suitable book.

I would recommend Robin Ellis's Mediterranean Vegetarian Cooking for Diabetics. Robin (the original Poldark) is an accomplished chef and Type II).

The link https://lowcarbfreshwell.com/ has a vegetarian menu section.
But you can just look up on the internet for low carb or Keto vegetarian recipes for lots of good ideas then you can pick ones for the foods you like rather than a book which may only have a few, on the other hand a book may give you ideas for things to try which you haven't thought of.

I have just looked at the link and there is no way I can sustain that diet without any form of rice, pasta, bread etc!

There are substitutions for those foods, edamame or black bean pasta is lower carb, cauliflower rice, butternut squash, celeriac.
I wasn't suggesting you followed that regime but looked at some of the recipes. Those foods you mention are really ones you should be looking to reduce if you are trying to manage your condition by diet and or oral medication.

Thanks for the link though. I’ve already cut down a lot on the foods I mentioned and steering away from highly processed foods. A lot of the plant based meat alternatives these days are highly processed of which I have been eating a lot of over the last five years where i used to make my own alternatives previously. My son is also vegetarian but prefers the plant based alternative, he has ASD so getting him to eat a ‘varied’ diet is a struggle and was easier to eat the same as him. However I’m now making things from scratch again.

There are lots of vegetarian books out there but one that really struck a cord with me was Amy Chaplin's ....
"At Home in the Whole Food Kitchen: Celebrating the Art of Eating Well" mainly due to its use of whole foods etc and lack of processed stuff.
Also, anything by Heidi Swanson (Near + Far & Super Natural Simple come to mind) which also focuses on unprocessed whole foods.

Carbohydrate is not your friend if a type 2 diabetic.
I chop up cauliflower to substitute for rice in my curries, there is a polish bread labelled chleb proteinowy which is very low carb, but many would find it rather a shock after 'ordinary' bread - though I did get some good results with low carb ingredients carefully incorporated into a small amount or ordinary bread dough after the first rise.
If you like it, try swede instead of potato for mashing.
I have been eating low carb without any breaks for almost 7 years now and I feel great and my diabetes is long gone. HbA1c numbers are not quite in the normal range, but I put that down to my age and not being told that I had elevated glucose levels for many years before diagnosis.
