I want to start making bread and would appreciate any recipes for proper yeast risen bread but made with flour mixes to reduce the carb content. Been looking around and the field seems to be dominated by keto stuff where the bread is more like unsweetened cake than anything you can toast.

So, can anybody point me toward a decent reduced carb bread recipe?

The Caldesi Italian cookbook has a recipe for bread that use spelt and oat bran with a bit of almond flour. I made a loaf a few weeks back and it was very tasty. It's got carbs in it, but not a huge amount.

I got the book for 99p on Kindle when it was on special offer.
